In spring, the excess young shoots are removed by hand. This is called budding.

All through the month of June, the fruit canes of each vine are tied up using split willow.

Our Gamay Noir à Jus Blanc vines (some of which are over a century old) are worked manually by the vinegrower-winemaker and his family.

Pruning, budding, trellising, trimming and harvest are all done manually.

Poor soils with good drainage along with high density planting (10 000 vines per hectare), naturally limit yields and allow terroir flavours to come thyroungh in the wine.
